Second week

Mmmm...banana bread

I'm sure there are many recipes for banana bread but i've taken this one from Sophies Dahls book.

Really easy and very yummy and a good way of using the forgotten about bananas looking tired in the fruit bowl.

75g butter, 4 ripe bananas, 200g brown sugar, 1 egg beaten, 1 tbsp vanilla extract, 1 tsp bicarb soda, pinch of salt, 170g flour.

Oven 180/ gas 4

bread tin

Mash bananas, mix in sugar, butter, egg, vanilla.
Add soda, salt & flour.
Pour into tin.
Bake for 1 hour.
Remove, cool, turn out and eat, nice with a spread of butter too!
